Wild Garlic Pesto Recipe

Ingredients:

  • 50g wild garlic leaves, washed and dried
  • 50g Parmesan cheese, grated
  • 25g pine nuts
  • 100ml extra-virgin olive oil
  • Salt and pepper, to taste

Instructions:

  1. Combine the wild garlic leaves, Parmesan cheese and pine nuts in the bowl of a food processor. Pulse until well combined and finely chopped.
  2. With the food processor running, slowly drizzle in the olive oil through the feed tube. Scrape down the sides of the bowl as needed.
  3. Season the pesto with salt and pepper to taste. Pulse the food processor a few more times to fully combine the ingredients.
  4. Transfer the pesto to a jar or container with a tight-fitting lid. Store in the refrigerator until ready to use.
